Ahead of the 2024 Guinness 6 Nations - Ireland v Italy match this weekend, we spoke to Chimac, one of the street food traders who’ll be fueling hungry fans at the match.

About Chimac

'The concept of Chimac began in 2016. Garret and I embarked on a trip to Seoul, where we instantly fell head over heels with the cultural phenomenon of Korean fried chicken. Upon returning to Ireland, we found ourselves obsessed, frying chicken day and night in our cosy kitchen in Dublin 8. The result was truly special - despite clothes and hair that constantly smelled of stale oil - we launched the menu for Chimac, and our first fusion restaurant opening in the heart of Dublin City in 2019.

We're excited to now extend our crispy twice-fried free-range chicken, signature sauces, and bold fusion flavours through to our partnership with KERB and Levy UK and Ireland.'

Chimac’s Famous Sriracha Caramel Sausage Sammie

'When we dreamt up the recipe for Chimac Sriracha Caramel five years ago in our Dublin restaurant kitchen, we encountered a problem. We simply couldn't stop eating the stuff... it's a sticky, sweet, spicy nectar that pairs perfectly with Chimac's signature twice-fried chicken. It's a staple on our restaurant menu and a fixture in our home cupboards - always ready to drizzle on breakfasts, lunches, brunches, and dinners.

One of the simplest yet most satisfying ways to enjoy the sauce is in the pure pleasure of a sausage sandwich, the true breakfast of champions. The sausage sandwich is a culinary classic that we thought couldn't be improved upon... until we introduced Sriracha Caramel!

All you need is a pack of your fave sausages, a batch loaf, and a bottle of Chimac's Sriracha Caramel - available on their website or at select independent retailers.'

Ingredients

  • 1x pack of sausages

  • Chimac Sriracha Caramel

  • Batch loaf

  • Butter, ketchup, brown sauce and any other condiments that take your fancy

Method

  1. Pour it up! Lather your sausages with Chimac Sriracha Caramel. Make sure you use a lined tray as this will get very sticky. Be generous with your pour and toss the sausages to coat them entirely.

  2. Pop them in a preheated oven at 175 degrees. Depending on your oven, they should take between 15 and 20 minutes. Check them at 15, and repeat every minute or two. You want them to caramelize but not burn.

  3. Remove from the oven once they're nicely coloured, caramelised, and very, very sticky! Take them out and let them cool. OPTIONAL: Sprinkle some sesame seeds if you've got them for a touch of class.

  4. Butter your bread and you're ready to go. Add ketchup or brown sauce if they tickle your fancy, but we prefer ours straight up.
