Food

Mindful menus

  • By removing all air-freighted fruit and vegetables, we now source local ingredients via our logistic partners to support Irish farmers and reduce food miles.
  • Rotating our menus seasonally reflects our belief that fresh Irish produce not only elevates flavour but also reduces our environmental impact.
  • Our menus feature vegan-based main courses, desserts, and pastries, as well as dairy-free yogurt and cream.
  • We've halved beef consumption, introduced lower-carbon alternatives like venison, and increased plant-based options.
  • We embrace a ‘Head to Tail’ approach to cooking, maximising every part of the animal to promote more ethical and sustainable practices.
  • We’re committed to supporting local, sourcing all our meat from Ireland and making the most of seasonal Irish fruit and vegetables throughout our menus.
  • As part of our commitment to sustainable catering in Ireland, free-range eggs are now standard across our business.
  • We only partner with suppliers who uphold the highest welfare standards and who share our commitment to net zero.

Consumables

Ditching disposables

  • Our partners’ venues are adopting reusable and recyclable options, including wooden crockery for grab-and-go areas and compostable consumables where reuse isn’t feasible.
  • Working with our suppliers, we’re reducing packaging and eliminating non-recyclable plastics to make our supply chain more sustainable.
  • We encourage our employees to bring and use reusable cups at work as part of our strategy to reduce single-use consumables.
  • We are proud to partner with venues like The CCD, that consistently achieve recycling rates of over 98%.
  • We’ve made the switch to Fairtrade-certified uniform suppliers to guarantee that our clothing is sourced ethically and sustainably.

Beverages

Responsible refreshments

  • Rainforest Alliance and Fairtrade-certified tea, coffee, sugar, and cocoa are standard across all lines to support ethical sourcing.
  • We work with sustainable breweries to bring eco-conscious drinks to our menus while supporting efforts to decarbonise the drinks industry.
  • Our menus provide low-carbon alternatives to sodas, like infused water drinks, and we actively recycle PET and canned waste to keep them out of landfills.
  • We’re always on the lookout for new ways to reduce carbon emissions in both upstream and downstream activity.

'Return for Children' initiative

We work with the Re-turn charity initiative ‘Return for Children’ to make a positive impact through recycling plastic bottles. From the initiative’s launch in August 2024 to January 2025, €31,000 was raised for children’s charities by the Aviva Stadium alone.

Waste

Conscious consumption

  • In partnership with Positive Carbon, we’ve introduced a groundbreaking food waste reduction initiative at The CCD and Aviva Stadium to identify food waste sources and implement targeted reduction strategies.
  • We’re aiming to reduce kitchen food waste to under 1% of food produced and have already cut it by 50%.
  • All our kitchens are fitted with sustainable appliances for efficient energy use.
  • We provide our kitchen teams with best practice energy-saving guidance.
  • All unused non-perishable food is donated to local charities and redistributed to support local communities around our venues.
  • We reuse and recycle cooking oil through filtration systems and ensure all used oil is properly recycled.

Empowering employees

  • By investing in both our existing talent and apprentices, we’ve built a team that’s driven, skilled, and ready to shake things up in the catering industry.
  • Employees are empowered to lead lower-carbon initiatives, and we provide the education and tools to help drive these projects.
  • We’re dedicated to increasing the number of female chefs in our team year on year, supporting initiatives that champion women in the catering industry.
  • Our team is encouraged to use public transport for commuting and to switch off gas in our kitchens when not in use, helping us lower energy consumption.
  • We’re making sure our kitchens are energy-efficient by installing LED lighting and working with clients to source renewable energy.
  • Hospitality can be a demanding industry, so we help our teams lead healthy lifestyles with sensible working hours.

Whilst upholding high sustainability standards in how we do business, we also actively seize opportunities to help our partners achieve the same. Our partner, The CCD, shares the same Event Sustainability Management ISO 20121 accreditation as well as the Environmental Standards ISO 14001, with Levy Ireland having played a key role in supporting their sustainability journey.
